I fell in love with an enchilada recently. And I immediately went out to buy the main ingredient–nopalitos–to try making it at home for myself. Cactus enchiladas…who knew they were so incredible?
On today’s plate is “Chicken” Cordon Bleu Pizza, which I converted to veggie by using chickpea flour for the “chickeny” protein and avocado for the ham.
I swapped in some chickpeas and rustled up this meal on a busy weeknight. It’s filled with cheese, homemade cream of mushroom soup, broccoli and hearty brown rice.
I’m such a fan of the versatility and simplicity of this recipe. I definitely recommend giving homemade frozen burritos a try. Yum!
If I hadn’t made that awesome broccoli parm recently, I might’ve poo-pooed the tomato sauce-aspargus pairing. I usually like my asparagus grilled with a balsamic vinaigrette, after all. But, it was so successful with myself and Mr. Meaty husband that I knew there was a great chance this would be a hit, too.
