Instead of breading and frying these jalapeno poppers, I wrapped them in egg roll wrappers and baked them in the oven. Much simpler, and probably a lot healthier, than the breaded and fried version.

Simply slice the eggplant (lengthwise) as thin as you can and coat in olive oil and kosher salt. Then roast it in the oven until it’s golden (about 30-45 minutes). Then you create your pizza as usual.
Honestly, my favorite pizza is cheese pizza. I know, it’s very vanilla of me (also my favorite ice cream flavor…real VANILLA flavor, not the “plain” ice cream). But I sometimes just don’t want my pizza adulterated by toppings. Great crust. Great sauce. Great cheese.

I’m exploring my Grandma Mary’s 1908 cookbook [The Rumford Complete Cookbook (1908)]. I love old cookbooks because they naturally use all real whole foods! And to be able to cook out of my grandmother’s copy of the Rumford Cookbook is such an awesome experience.
This White Pizza Dip is soooo delicious. It’s like cheesy tomatoey garlicky crack. It may be my new favorite dip. I absolutely love it when I get a big hunk of roasted garlic. And the kids and Mr. Meaty really liked this dip, too.
We love lasagna around here. It’s our go-to holiday meal and it was even the first thing I ever cooked for Mr. Meaty back when we were dating (yes, the “real” meat version just for him).
So, when I saw this fantastic-sounding Lasagna Soup recipe, I had to give it a shot. Tomato soup with creamy cheese and noodles? Yum!
Have I mentioned my kids love Macaroni and Cheese? Surely not. There are only more than a dozen mac and cheese recipes on the site. And even plain macaroni noodles are pretty much our go-to lunchbox food for Bug. It’s one of the few things she’ll ALWAYS eat.
