Baked Potato Ball Curry, honestly I think we’ll be calling it “Tater Tot Curry” around here. I cannot even believe how delicious the little baked potato balls turned out. I could eat them even without the curry sauce…and believe me, I LOVE curry sauce.
This is a great holiday meal without all the fuss of “real” twice-baked potatoes. Not having to stuff those little shells made twice-baked potatoes a much more everyday meal for us.
It’s Secret Recipe Club reveal day again and I have an incredible recipe to share today! I don’t normally do this, but this month I selected a previous SRC selection from the blog I received (normally I avoid those since it seems like not paying proper homage to the blog I get assigned). BUT, I […]
Welcome HuffPost readers! Learn more about Me. January is lovely. And it’s National Soup Month (in case you can’t tell, soup is one of my absolute favorite types of meals). Bug (our nearly 3-year-old) recently decided she is far too big for naps, so she’s become my big kitchen helper. She was so excited to pull the […]
Day 355. It’s going quickly now…only 10 days to go after today. Today’s recipe came by happenstance when a friend of my husband’s asked whether he likes sweet potatoes. For the record, he does not (the girls and I like them). His friend not only mentioned how my husband might like Korean sweet potatoes better […]
Day 351. Remembering my renewed pledge to make more bread, I decided to use my Indian Potato Kale Soup to create a new bread recipe based on mashed potato bread. I created a similar recipe way back on Day 34: Mashed Chickpea Cauliflower Bread. This is a great all-in-one meal bread, full of nutrients from the […]

Somehow at this point, with the holidays and having run through more than 350 other recipes it seems like it might be the longest 15 days ever. But, I stumbled on a pretty tasty-sounding recipe for today. I’d […]
Day 335. Another creation for our second Thanksgiving, these potatoes were completely last minute. We remembered as the Fresh Green Bean Casserole was going into the oven that we hadn’t yet made the mashed potatoes. So, of course, I decided to try something different with the 40 minutes I had left to create. I’m so […]
Day 329. Thanksgiving salad is the perfect way to enjoy leftovers. After a day of culinary debauchery, we’re going to take a break this evening and have our leftovers mixed into a green leafy salad. I think this will be light and delicious and may put a dent in some of our leftovers. You can […]
Welcome HuffPost readers! Learn more about Me. Day 322. I love potato soup, and it’s toggling back and forth between soup weather and non-soup weather here. So I grabbed the chance to make this delicious dish on a cool, drizzly day. The slow cooker potato soup can be made vegetarian or vegan based on which […]
