Bacon-Persimmon Pasta {Vegan}

Day 213.

I have only previously had persimmons in a sweet treat capacity, but I’ve recently been seeing persimmon paired with bacon. So, of course, I had to try a vegan version. If I had to compare persimmons to anything, I’d call them mushroomy, much like a portabella, with a bit of apricot wrapped in.

I’m over at OAMM again today with Bacon-Persimmon Pasta.

The Results
Holy moly. Why have I not had savory persimmons before. I wanted to make a second batch immediately just to eat this again. Loved it. Seriously fantastic.

Bacon Avocado Melt {Vegetarian} and Meatless/Vegan Monday

Day 206.

I’m over at OAMM again today with Bacon Avocado Melt. This is one of our family favorite quick meals. My husband and I have been making these since back before we had kids and still made separate meat and meat-free options.The Results
Yum. Delicious as always. This one is also super easy to make vegan. Just use Daiya Mozzarella instead of provolone slices. Delicious.

Chickpea Tender Mandarin Asian Salad Fix’ns {Vegan} and Meatless/Vegan Monday Link-up

I love these chickpea tenders and the sesame dressing is fantastic. The kids loved all the toppings.

Curry Peach Quinoa {Vegan} and Meatless/Vegan Monday Link-up

I’m over at OAMM again today with Vegan Curry Peach Quinoa. It’s a simple sweet and spicy dish with a touch of jalapeno tempered by delicious diced fresh peaches.The Results
I absolutely loved this dish. So did the kids. My husband said it was really good, in spite of being “kinda weird.” I’m not sure what that means, but he ate all of his portion, so we’ll call that positive feedback.

Eggplant Pizza {Vegan} and Meatless/Vegan Monday Link-up

I’m over at OAMM again today with Vegan Eggplant Pizza. I made our pizza with my usual Betty Crocker pizza crust. It’s Red, White, and Almost Blue (Purple). So, you have an excuse to make it for Fourth of July dinner tonight.The Results
Mmm…this was so incredibly good. Somehow even better than the bruschetta version. I’m sure the layer of cheese and the awesome pizza crust had something to do with that. The kids and I gobbled this up.

Meatless/Vegan Monday: Meaty Vegetarian Lasagna and Link-up

Day 178.

I’m over at OAMM again today with a Meaty Vegetarian Lasagna.This is a family favorite recipe that we’ve developed and changed over the years. It started back in the early days of my sister and I becoming vegetarians as cheese lasagna.
The Results
Everyone loves this dish. It’s a no-brainer at family functions, with even the meat-eaters gobbling it up. It’s easy to vegan convert it with Daiya mozzarella replacing the mozzarella and tofu ricotta replacing the ricotta. I haven’t found a great assimilation of Swiss, so I just leave that out if I’m making it vegan. It’s delicious both ways.

Meatless/Vegan Monday: Chicken Green Bean Casserole Recipe {Vegetarian} & Link-up

Day 171.
I’m over at OAMM again today with a Vegetarian Chicken Green Bean Casserole. It’s a great change-up on the holiday green bean casserole. Adding “chicken” makes it a delicious side or an all-in-one meal for the vegetarians at a family feast.
The Results
The kids went absolutely nuts over this one. Somehow I don’t think I’ve made it since either’s been eating solid foods. Goose thought the creamy green beans were so awesome and Bug was a huge fan of “crunchy onions.” Ha. The hint of lemon juice is excellent and really lightens up that heavy cream of mushroom/mayonaissey sauce.

Meatless/Vegan Monday: Buffalo Chicken Bagel Pizzas Recipe and Link-up

Day 164.

I’m over at OAMM again this Monday and we’re enjoying Buffalo Chicken Bagel Pizzas for dinner. These are great for the whole family. Anything pizza is great for kids and our tiny-ones love the slightly spicy flavor.

The Results
Ooh, yummy. I love the slightly spicy chickpeas. And, of course, the pizza part is fantastic. This is a definite winner.

Meatless/Vegan Monday: Blueberry Muffins Recipe and Link-up

Day 157.

It’s another OAMM Monday and this week I’m having Vegan Blueberry MuffinsVegans get a little bit of the shaft when it comes to baked treats. No cheese, no eggs, no milk and even no honey all mean that store-bought treats ad even traditional recipes are a no-go. So I crafted these Vegan Blueberry Muffins with buttery spread and applesauce replacing the butter and eggs. Soymilk also replaces the milk. The butter is the biggest trick. Especially with the topping. It’s much easier to make buttery spread streusel crunchy with the addition of the oats. Not required, but oh so much easier.

The Results
The kids are completely in love with me today. Blueberry Muffins for dinner? What? Maybe we’ll have leftover burgers for breakfast to balance life out. These are fabulous. They don’t seem to get as puffy as the non-vegan counterparts, but the taste and texture are excellent.

Meatless/Vegan Monday: Curried Tofu Breakfast Quesadilla and Link-up

Day 150.
It’s another OAMM Monday and this week I’m having Curried Tofu Breakfast Quesadilla. This vegan treat was crafted with our toddler, Bug, in mind. She is a huge fan of curry and quesadillas. Not so much of eggs. So, we went with scrambled tofu. Such a healthy and simple vegan breakfast.

The Results
We all loved these quesadillas. So filling and delicious. Bug’s response: “Mmm…hot…mmm, mmm good.” She later brought me toys and told me “Happy Birthday Mommy.” No, it’s not my birthday. Yes, I’ve convinced myself this was her extended thank you for her yummy breakfast treat.
