This is a great recipe to use to make a yummy meal out of a big batch of leftover baked potatoes. And, of course, the best part is mixing up the mix-ins however everyone likes them. For the TVP, I added a bit of bacony salt (made with smoked tomato spice blend just like the Bacony Quinoa) to make the crunchy/chewy TVP simulate bacon. Delicious.
Green Giant Seasoned Steamers Brussels Sprouts made a tasty addition to restaurant-style fried rice with pumpkin puree as an egg substitute.
Today’s VeganMoFo Iron Chef theme is Potatoes and Sesame, I decided to try my hand at Hasselback potatoes with my three varieties of CSA box potatoes: creamer, purple and sweet potatoes.
Deliciously simple Asian-inspired noodles with a light sesame-soy sauce. Perfect for the lunch box or an easy weeknight meal.
ups of puree. Which is cool, because that’s about the amount of puree in a large can of pumpkin. You could totally substitute canned pumpkin in this recipe for an easier version.
These delicious Mustard and Garlic Roasted Potatoes are a delight. I’m up at my mom’s for a visit and the entire extended family loved this dish. The mustard and garlic flavor is subtle, yet manages to add so much to the roasted potatoes.
I recently asked on Facebook for new road trip tips for eating. I headed to a conference Friday and we packed up the kids and lived in a hotel for a couple of days. I got some great responses from friends and readers and wanted to share them all with you! These tips vary, some are for longer trips.
It’s pizza day! Hooray! I’ve made some fabulous homemade pizza dough over the years. But when I recently acquired a bread machine, I really wanted to try bread machine dough recipes. Plus, I wanted a good-tasting whole wheat crust. The other recipe I use just didn’t taste quite right with all whole wheat white flour.
Quinoa and Brown Rice blend is a stupid simple recipe that for some reason I just hadn’t thought to make until recently. The kids went crazy for it! We’ve had a bit of a problem previously because, while Bug loves rice and Goose loves quinoa, neither will eat a ton of the other on its own. And this blend, they BOTH ate with gusto. Win!
These delicious treats bring back many fond memories with my dad, who, like myself is a HUGE Mexican food fan, and loves to try the banana chimis at every new restaurant. Sometimes you’d find one filled with delicious hot banana and topped with gooey chocolate, honey and home-whipped cream. Drool.
