Quinoa Egg Noodles {VEGETARIAN, WHOLE FOOD}: This Week’s Cravings {EGG RECIPES}

Today’s This Week’s Cravings theme is EGG RECIPES (including eggless “eggs”); May is National Egg Month and I’m sharing my newest obsession: Quinoa Egg Noodles. Quinoa noodles are basically the entire reason I wanted a pasta maker at home. And, thanks to the lovely and talented Stand Mixer Attachment Fairies at KitchenAid, I finally got one! But, more on that later. Quinoa noodles are so awesome, because, like most kids, mine are addicted to noodles. They would eat them for every meal of the day if I let them. And, since I’m a vegetarian (though the kids are still undecided), we usually end up having “beef” or chickpeas on top of our noodles. But really, the kids like theirs best with just butter and Parmesan cheese. Putting any sauce on the noodles diminishes their noodliciousness, in their humble opinions. So the absolutely AWESOME thing about quinoa noodles is that the noodles themselves are a complete protein! How cool is that?

Oh! And I didn’t forget to tell you about the KitchenAid Attachment Fairies. My wonderful friends at KitchenAid sent me a Grain Mill Attachment AND a Pasta Press Attachment for my KitchenAid Stand Mixer. And guess what else? They might just send attachments to you, too! See my KitchenAid Attachment Review and Giveaway Post for details on how you can win these lovely accessories for yourself so you can make homemade quinoa pasta, too, and give yourself a great Post-Mother’s Day gift. You know, since the hubster and kids forgot to get you the attachments of your dreams.

The Results

Wowza! This was incredibly simple and delicious. My husband and I LOVED this pasta. The kids liked it at first, but got a little sick of the grainy texture, I think. Next time, I think I’ll try half quinoa and half whole wheat white flour.
