Day 11.
Tostada Tuesday! Ole’! OK, this is going to be a delicious way to try out my new ground beef substitute. It was really good on its own (or so I think), but how will it hold up in a recipe? The real test will be later on to see if it holds up in chili, but for now, we’re going with tostadas!
Loaded Tostadas
Ingredients
oil
12 tortillas
taco seasoning
ground beef substitute of choice (I used 1/4 of Beef Substitute)
1/4 medium onion
1 15 oz. can refried black beans
1 C cooked rice
Toppings
lettuce
tomatoes
shredded cheddar or Mexican blend cheese
salsa
sour cream
Directions
Brown beef substitute with onion. Add taco seasoning and cook. Heat oil in a heavy skillet. Fry tortillas in oil, about 20 seconds on each side. (Or, if you’re tragically bad at frying, like a certain blogger, brown them on the griddle instead.) Drain on a paper towel. Load the tortilla with your favorite toppings.

The Results
So good. It still doesn’t taste exactly like the pre-packaged beef substitutes or as close to beef as my husband prefers, but man this is good. It’s pretty much like beans, lentils and rice on a tostada with toppings. But I love it. Delicious.
