Not only do I have a completely fabulous recipe to share with you today, but an awesome giveaway from a company that, if you’re here in the U.S., you may not have heard of yet. I found them while searching for popsicle molds. My kids LOVE popsicles. And, well, all I had was a set of Mickey pop-makers…with four slots. This is not enough for my pop-junkie children.

So, when perusing the world of popsicle molds, I found these beauties. How cool is that? I can freeze a pop and pack the push pop in my daughter’s lunch box. Woo! Speaking of which, my VeganMoFo theme this year is Vegan Lunch Box, so this recipe fits in perfectly.  All I did for the recipe, it was crazy simple, is mix up coconut milk, maple syrup and pumpkin spice syrup until it tasted delicious. Then I put on the caps and froze the pops overnight. Easy and delicious.

Coconut Milk Pumpkin Pie Push Pops

Yield: 2 pops

Coconut Milk Pumpkin Pie Push Pops

Ingredients

1/2 cup coconut milk
2 Tablespoons pumpkin spice syrup
2 Tablespoons maple syrup

Instructions

Mix ingredients and pour into pop molds. Cap and freeze overnight.

Ice cream/popsicle molds

But, since the people at Lekue are incredible, when I asked for a sample of the pop molds to review and give away, they didn’t stop at ice cream/popsicle molds. They also sent several more goodies.

Lemon/Lime Sprayers

As someone on Facebook guessed at the time, these babies pop into lemons and limes so you have a nearly-instant citrus spritzer. Spray lemon or lime on salads or in your drinks! Until I received it, I had no idea I needed one. Now I love it.

Also in the package, a food steamer and an egg cooker (which vegans could use to microwave mock custards and the like).
