For this month’s The Secret Recipe Club, I was assigned Eat Laugh Love, a blog written by Denise Evans. She has a great passion for food and a ton of yummy, adventurous recipes. I really wanted to try her recipe for Pumpkin Gingerbread Blueberry Muffins, but I’ve been trying to get Mr. Meaty more involved with menu planning. So, when I narrowed down the choices to four, he picked Chicken Cordon Bleu Pizza. The other delicious options were Baked Shrimp and Veggie Egg Rolls and Fried Chicken. I hope to try converting them all to veggie favorites in the future.
But, on today’s plate, is “Chicken” Cordon Bleu Pizza, which I converted to veggie by using chickpea flour for the “chickeny” protein and avocado for the ham.
Ingredients
pizza dough1 large red onion, thinly sliced and caramelized6 cloves garlic, smashed1/2 cup sour cream2 ounces cream cheese, softened1/2 avocado, mashed2 Tablespoons Italian seasoning1/2 teaspoon hickory smoked salt1 Cup chickpea flour1/2 Cup grated Parmesan1/2 Cup grated mozzarella1/2 avocado, sliced2 Tablespoons lemon rind, gratedInstructions
Preheat oven and pizza stone at 450 degrees.
Roll the pizza dough into a round shape on a pizza peel covered with cornmeal.
Mix the sour cream, cream cheese, mashed avocado, chickpea flour and Italian seasoning in a small bowl. Spread the sauce on the dough, spreading to the edges of the dough.
Top with cheeses, avocado slices and lemon rind. Bake for 15-20 minutes at 450F.

What an interesting recipe, I have never thought of using chickpea flour, should definitely give this a try, looks so delicious..
