Our first pseudo-paleo dish was a huge hit. We made both a curry chicken version and a chickpea curry version. Both were amazing according to all reports. I loved the curry chickpea dish and it was super simple to make. We served ours over rice, but if you’re a real Paleo person you can serve it as-is with just chicken, about a pound cut into cubes, or chickpeas if you’re doing paleoish vegetarian.
To make it in line with the Whole30 vegetarian version of Paleo, sprout or soak your chickpeas ahead of time. We adapted this recipe from the Paleo Meal Plan.

Our girls gobbled up both versions (chicken and chickpeas) and everyone else loved the chicken version and Mr. Meaty even ate some of the chickpea version. (High praise from him since he’s not a huge chickpeas fan). It’s pretty amazing to find something we can all eat sort of together lately. Goose wasn’t bothered by the tomatoes since there was no dairy at all in this dish (her allergies tend to pile on top of one another, if she gets just a bit of one she can usually handle it).
The dish reminds me of one the hubby and I used to make before kids with sour cream and mock chicken. But this version is even better, especially since we never have sour cream, but always have coconut milk in the house.
This recipe is a definite repeat! Delicious! I think I might try mixing in some roasted cauliflower the next time we make it. I like veggies mixed into my curries and stir fry dishes.
