So, horror of horrors (especially during a pantry challenge), I can’t eat grains or dairy right now. Or sugars for that matter, but that’s pretty easy. So, alas, “normal” pancakes are out. But I remember trying paleo pancakes and liking them, so I figured I’d give those another shot. Bananas and eggs are the only required ingredients for paleo pancakes, but I’m mixing in a bit of cinnamon essential oil and a dollop of almond butter to kick these babies up a notch.
Paleo Pancakes
Serves 1
Ingredients
2 ripe bananas, mashed
1 egg
1 tablespoon or so of almond butter
1-2 drops cinnamon essential oil (I buy mine HERE)
Method
Mix all ingredients together. Heat a pan to medium heat. Add coconut oil to pan and a few dollops of batter. Brown each side (about 2-3 minutes per side). Top with your favorite fruits or maple syrup. Devour and never be jealous of “normal” pancakes again.
I absolutely loved these pancakes. They’re simple to make and super tasty. I’ll be experimenting with different add-ins and flavors for sure. One of the kids loved them, the other poo-pooed them so I suppose it’s a matter of personal taste. These are also a great protein kickstart for the morning while still feeling like the breakfasty foods you know and love. I love starting with a protein because I don’t get hungry so quickly during the day and it’s better for my metabolism.
