I was pureeing my sweet potatoes for Sweet Potato Mac & Cheese and didn’t want to throw away the skins. So we opted for fried sweet potato skins. They turned out so yummy, I had to share.
Fried Sweet Potato Skins
- Sweet potato skins, cut lengthwise
Fry the skins in deep fryer or in a couple inches of oil in a pan, until crispy. Shake cinnamon and sucanat on top. Devour. These are so tasty and so simple! A new favorite for sure!
UPDATE: These are great now that I’m on a grain-free diet and can’t have standard potato chips! I fry these up and can get that crispy crunch (I like them best with salt now) with sweet potatoes instead of white potato chips. Delicious.
