Freshpedition: Healthy Road Trips

Our family’s a road trip family. If there’s an option between flying and driving, I’ll choose driving 9 times out of 10. The only problem with long road trips for a whole food family, is healthy eating along the way. Now, that’s not to say you can’t find some great natural  mom & pop restaurants and markets along the road, but it’s best to pack your own “just in case” food if you’re really wanting to stick to your food rules the whole way. That means we’re packing a big cooler and lots of freezy packs to keep our food fresh. In addition to the fresh food, I make a big batch of granola and bars to throw in the trunk for snacks. I learned my techniques from the healthy snack guru, my mom. When we were kids, we road tripped a lot. Dad and a friend converted a van for our family road trips. It was rockin’ with blue shag carpet, wood paneling and a sweet foam bed in the back. And to us, the greatest fun was spinning in the center captain’s chairs while munching on graham crackers and apple slices.

Sometimes, for a super treat, we ate apple halves filled with peanut butter and granola. Those snacks are some of my go-to road foods with my own kids. One of our even more frequent treats are pint zipper bags filled with air-popped popcorn! The kids love it and it’s incredibly easy to make and pack. With the Freshpedition, Ben and Justin are stocking their fridge with fresh veggies from Farmer’s markets across the country. Which, if we can swing it, is exactly what we do! (Just on a tiny scale with a cooler instead of a fridge.)
