Black Forest Bacon

 Black forest bacon made from vital wheat gluten, flour, and spices and it’s vegan? Cool! It’s pretty easy to whip up in your home kitchen in about an hour or so if you want to give it a shot and it works well in most bacon recipes.

Black Forest Bacon

Adapted from The Complete Guide to Vegan Substitutions

Ingredients

MEAT

2 cups vital wheat gluten

1/2 cup whole wheat pastry flour

1 tablespoon garlic powder

1 tablespoon paprika

1 teaspoon ground pepper

1/4 cup oil

1/4 cup maple syrup

1 cup vegetable broth

GLAZE

1/4 cup maple syrup

1/4 cup sucanat (or brown sugar)

1-2 tablespoons water (if necessary, just enough to make glaze pourable)

1-2 tablespoons House seasoning

1/2 tablespoon naturally-smoked Hickory salt (or to taste)

Method

Combine wet meat ingredients.

Combine dry meat ingredients.

Mix wet with dry until dough forms. Form into a log.

Spray a large piece of foil with cooking spray.

Place log on the foil.

Mix all glaze ingredients.

Pour 1/2 mixture over the log.

Tightly seal foil package.

Bake at 350 for 45 min.

Remove from the oven.

Open packet and pour the remaining sauce over log.

Re-seal. Bake an additional 10 min.

Slice and add to recipes or eat as-is.

Yield: 8
