Mmm…Cucumber Lime Salsa. Win! This recipe just sounded so fantastic. Plus, I had some queso blanco that I needed to use up instead of gobbling down by the fistful. So, tacos it is! I love the chunky vegetable salsas and this sounds like a delicious recipe. Kalyn has a great taco seasoning, too, but we’re partial to our own, so I subbed that in.

Spicy Beef and Bean Tacos with Cucumber Lime Salsa
Adapted from Spicy Beef and Bean Tacos with Cucumber, Lime and Tomato Salsa.
Ingredients

  • 2 cups Lentil and Rice Hamburger Meat ground beef substitute
  • 1 teaspoon olive oil
  • 3 tablespoons taco seasoning mix
  • 2 cups black beans
  • 1 1/2 cups cucumber, finely chopped
  • 1 cup tomato, finely chopped
  • 1/2 cup fresh cilantro, finely chopped
  • 1/4 cup thinly sliced green onion
  • 1 teaspoon green salsa
  • 2 tablespoons lime juice
  • 1 cup queso blanco or Mexican blend cheese, shredded
  • 8 small tortillas (I used white corn)

Directions
If your “ground beef” is already divided into quart freezer bags, put the olive oil and taco seasoning in the bag and squish it around to season. Layer warmed “beef” and black beans on tortillas. Combine remaining ingredients, except cheese, into a salsa. Layer the salsa on next and top with cheese.

The Results
My husband actually is the huge cucumber fan around here, so I made these with him in mind. The kids poo-pooed them for some unbeknownst reason. They like everything in it, except maybe the cilantro is a little strong for them. My husband and I both liked it.
