This recipe is inspired by the fabulous Meatless Meatballs Subs, and is also something you can make from leftover meatballs from that recipe.
Mushroom Meatball Pasta
6 Meatless Meatballs (half recipe)
1/2 pound pasta of your choice
3 Tbsp. olive oil
2 cloves garlic, minced
1 Tbsp. Italian seasoning
parmesan cheese, top to taste
Prepare Meatless Meatballs as directed for sub sandwiches. Meanwhile, prepare pasta. Saute garlic with olive oil in saute pan. When noodles are ready, add noodles and Italian seasoning. Stir in sauce from meatball preparation. Place meatballs on top of pasta serving. Serving suggestion one to two meatballs per plate, depending on size.
I’m having a tough time deciding how I like this better, as a sub or as a pasta sauce and topping. I’m not usually a fan of meatballs on my pasta, but these are so delicious and the sauce is so rich, it is delectable. I definitely suggest making the full meatball recipe and trying the meatballs both ways. Subs for lunch and pasta for dinner, anyone? Yum.
