Day 71.
My husband loves cucumbers and I love cream cheese. We each have issues with the other (I’m particular about the thickness of my cucumber slices and dislike pickles immensely, he’s not fond of cream cheese). But, if the recipe is good, we both are capable of liking the other. So this recipe is perfect for our family (our toddler loves both…even pickles, ick).
Cucumber Sandwiches
Adapted from Veggies Dream Sandwich.
Ingredients
sliced bread (I used leftover sourdough garlic toast)
1/4 C cream cheese
1 cucumber, sliced
leaf lettuce
olive oil and red wine vinegar (to sprinkle on sandwiches, if desired)
1 tomato, sliced
6 pepperoncini peppers, sliced
1 avocado, mashed or sliced
Hot olive blend (optional)
Directions
Slice your cucumbers, tomatoes, and peppers.
Slice or mash your avocado, depending on your preference.
Mix together cream cheese, avocado mash, peppers and olive blend. Add House Seasoning blend to taste (4 parts kosher salt, 1 part each garlic powder and black pepper).
Spread desired amount of cream cheese blend on bread slice(s).
Arrange a single layer of cucumbers on one slice of bread.
Sprinkle with some olive oil and red wine vinegar.
Layer tomato slices and lettuce.
Salt and pepper to taste.
The Results
Drool. So good. Our toddler ate hers deconstructed, bento style. She must have eaten about 1/2 C of the “dip” (avocado/cream cheese blend). We loved these sandwiches. Our baby even enjoyed some of the tomatoes and cucumbers.
