Day 43.
This is an interesting one to me. I am expecting to not like it. It has mustard in it, which I’m not fond of in the plain yellow variety. I used to hate all mustard, but developed a bit of a hankering for the spicy brown stuff when pregnant with our youngest. Odd, but true. And, unlike the weird Carne Asada Steak Taco cravings, the spicy brown mustard craving did not go away when she was born. Plus, it’s a lot of “meat” and I’m just not that fond of meat or “meat” that I’d usually like that. My husband though, loves meat and mustard. But I digress, here’s the recipe. This is another of my freezer meals.
Vegetarian Cheeseburger Boats
Ingredients
1 medium French bread loaf (I used leftover Chickpea Bread)
2 pounds ground beef substitute
1 Tbsp. mustard
1/2 C onion, diced
2/3 C evaporated milk
1/2 C cracker crumbs
3/4 tsp. Accent seasoning (since this is MSG, I substituted Spike vegetable seasoning)
1 egg
2 tsp. salt
1/2 tsp. pepper
8 oz. Cheddar Cheese, shredded
Slice the bread loaf lengthwise. Cut the bread in half lengthwise. In a large bowl mix all ingredients other than cheese and bread. Lay bread on foil. Divide the meat mixture among the two layers of bread and spread. Wrap and pull together the foil so that the bread is wrapped in foil, but not the meat portion. It should be open on top (See pictures below). Place on a cookie sheet and bake at 350 degrees for 40 minutes. Garnish with cheese and return to oven for 5 minutes longer. Allow to cool a few minutes, slice, and serve.
Follow the above instructions taking a few extra steps. Before placing the meat mixture on the bread cover the bread with a layer of plastic wrap. Now lay out meat mixture on top of the bread. Add the cheese on top. Wrap the plastic wrap up and around meat mixture. Now lay out another layer of plastic wrap and lay the bread and meat mixture on top of that. Wrap that sheet up and around the bread and wrapped meat mixture. Now wrap all of that in foil. To serve: Unwrap all parts. Place frozen meat mixture on top of the frozen bread, removing the plastic wrap. Place inside the foil and leave an opening at the top. Bake at 350 for 1.5 hours or until meat is heated through. Slice and serve.

The Results
Our toddler devoured 1/2 of this recipe by herself. It was actually a little creepy. I thought to myself, “didn’t we feed you today?” For the record, we did. She either loved it or hit a bizarre mid-day growth spurt. I actually liked it. Though I think I’d rather have made it with barbecue sauce, it was pretty good as is. I highly recommend you make it with your favorite condiment, even if that’s mustard.What is your favorite condiment, and is there one you can’t stand?
