Day 21.
So, I looked at this recipe and thought, “well, if it tastes like broccoli, it might be weird, but if it doesn’t, what’s the point?” But, I tried it anyway, figuring there was something to hiding broccoli because our daughter is weird about it. She likes it some days and not others. I’m glad I did.
Broccoli Cheddar Bacon Burgers
Ingredients
1 pound equivalent ground beef substitute (I used 1/4 of this)
1/2 C bacon bits
2/3 C seasoned bread crumbs
1 C fresh or frozen chopped broccoli (if frozen, allow to thaw partially)
1 C grated sharp cheddar
1 egg
2 tsp. dried minced onion
1 clove minced garlic
1 Tbsp dried parsley
salt and pepper to taste
Directions
Combine all ingredients. Shape into patties. Grill, broil or pan fry.
Serve on your choice of bun and garnish as desired.

The Results
It does taste like broccoli cheddar! And it’s sooo good. I couldn’t really taste the bacon all that well, it added to the dish, but I think I’d like to throw more “bacon” on top next time. I did add a slice of muenster cheese to our burgers. They were yummy and our daughter gobbled hers up while running through the living room with it. She didn’t even let a crumb drop. It was kind of funny, in spite of the fact that she’s supposed to eat her dinner at the table. Such is life. I highly recommend these.
