Thai Peanut Sauce
Adapted from Peanut Sauce.
- 1 tablespoon peanut oil
- 1 tablespoon curry paste
- 1/4 cup coconut milk
- 1/4 cup Easy Slow Cooker Vegetable Broth
- 3 tablespoons “fish” sauce:
- 1 tablespoon soy sauce
- 2 tablespoons water
- 1/3 chopped sun-dried tomato
- dash of kelp granules
- 2 tablespoons lime juice
- 2 tablespoons brown sugar
- 1 tablespoon chili sauce
- 2 tablespoons peanut butter
- 1 teaspoon sesame oil
- 2 tablespoons peanuts (roasted and crushed)
Directions
Heat oil. Add curry paste and saute. Add all other ingredients and simmer to thicken, about 2-3 minutes.
