Paleo and Vegan Banana Almond Butter Coconut Smoothies
OK, so I’ve been looking into Paleo vegetarian recipes. Because, well, our food intolerance list has become ridiculous. For me, it’s gluten and sugar. For Goose (3) it’s dairy and nightshades. The only issue is in whether I want to stay a “real” vegetarian. Paleo vegetarian or vegan meals are a bit more limited than traditional Paleo.
So, I’ve considered adding things like gelatin and fermented cod liver oil to my diet for protein/health reasons. After all, I’m a vegetarian for taste reasons, not really for moral reasons.
Yes, I consider the moral thing a nice bonus, but I still have leather items of clothing and such, so well, you know…animals aren’t really saved entirely by my existence.
But, it feels a little like failure to go from vegetarianism to eating gelatin and cod liver oil. I’m probably just going to have to suck it up and get over it for health reasons. But I could use a little community love and support about this possibility.
Any other gelatin-eating vegetarians out there?

I crafted this little beauty, a paleo smoothies recipe, on a whim the other day for the girls and I.
It’s a great mix of chunky monkey type ingredients: bananas, roasted almond butter and coconut milk. Yum!
It’s healthy, sugar-free, dairy-free, vegan and Paleo (I think). Come join my pseudo-vegetarians anonymous meeting and enjoy this delicious drink. This particular recipe has no gelatin…yet.
Banana Almond Butter Coconut Smoothies
Ingredients
2 cups unsweetened coconut milk (like this)
3 tablespoons almond butter (like this)
1/2 cup frozen banana slices
1 teaspoon vanilla
Method
Blend all ingredients. Serve.
