Eggplant and Zucchini Chips {Vegetarian}: This Week’s Cravings {Appetizers and Party Platters}

December 12, 2011 By Kristi

Day 345.Today’s This Week’s Cravings theme is Christmas Appetizers and Party Platters and I’m sharing Eggplant and Zucchini Chips. These are made simply with slices of zucchini and Japanese eggplant in an egg, flour and breadcrumb batter. We like to serve ours with marinara and Ranch dressing dips.

Eggplant and Zucchini Chips

Ingredients

2 cups slice Eggplant, Japanese
2 ½ cups slice Zucchini
1 tablespoon Kosher Salt
½ cups Flour, All-Purpose
2 individual beat Egg
1 cup Bread Crumbs
½ cups Vegetable Oil

The Results
The kids and I absolutely loved these. My husband (not a big eggplant fan), liked the zucchini chips, but not the eggplant. The chips turned out slightly crisp and not greasy. We had leftovers over spaghetti with a bit of melted mozzarella later in the day and enjoyed that just as well.
