Once I had my new batch of Homemade Vegan Fish Sauce made, I was ready to try it out on some of the delicious fresh broccoli from our CSA box. Our 3-year-old, Bug, is weird about cooked broccoli right now. She LOVES raw broccoli, but for whatever reason doesn’t much care for it cooked. Even just barely cooked. So I was super excited about a new way to serve raw broccoli, with Thai flavors, red onion and peanuts. Yum! I left out the mint because our family doesn’t care for savory mint, but feel free to use it in your batch.
Thai-Flavored Raw Broccoli Salad
Ingredients
7-8 cups bite-sized broccoli florets
1/2 cup thinly sliced red onion
1/2 cup peanuts
3 Tablespoons fresh-squeezed lime juice
2 Tablespoons vegan (fish sauce|https://veggieconverter.com/2012/05/vegan-fish-sauce-vegan-whole-food.html|)
1 Tablespoons sucanat or other natural sweetener
1/2-1 teaspoons hot pepper flakes (optional)
Method
Mix lime juice, fish sauce, sucanat and hot pepper flakes. Toss other ingredients together and pour mixture over broccoli. Serve.

The Results
We all loved this in our own ways. The adults ate everything. Goose devoured the broccoli and peanuts. And weirdo Bug devoured the red onions and peanuts, along with a bit of the broccoli. A delicious side dish that I think could easily be made into a main dish served over cous cous with some chickpeas thrown in.
