I love avocados and I’m beginning to love egg salad! It’s so simple and healthy when made with wholesome ingredients.
The girls and I love hard-boiled eggs and, while they aren’t fond of curry powder, it’s easy to season just the adult portions and leave the kids’ egg salad with just a bit of salt and pepper!
Curried Avocado Egg Salad
Serves 2
Ingredients
4 hard-boiled eggs, chopped (I send mine through the egg slicer in both directions)
1 large avocado, cubed
2 tablespoons mayonnaise, homemade if possible
2 teaspoons curry powder (buy it here)
Salt and pepper, to taste
Method
Mix all ingredients.
Serve either in a bowl or as a sandwich filling with lettuce and tomatoes.

Ingredients
