Curried Avocado Egg Salad: Paleo, Gluten-Free

Avocado Egg Salad

I love avocados and I’m beginning to love egg salad! It’s so simple and healthy when made with wholesome ingredients.

The girls and I love hard-boiled eggs and, while they aren’t fond of curry powder, it’s easy to season just the adult portions and leave the kids’ egg salad with just a bit of salt and pepper!

Curried Avocado Egg Salad

Serves 2

Ingredients

4 hard-boiled eggs, chopped (I send mine through the egg slicer in both directions)
1 large avocado, cubed
2 tablespoons mayonnaise, homemade if possible
2 teaspoons curry powder (buy it here)
Salt and pepper, to taste

Method

Mix all ingredients.

Serve either in a bowl or as a sandwich filling with lettuce and tomatoes.

Paleo Curried Avocado Egg Salad

What’s your go-to sandwich? Egg salad is a great, healthy protein-packed sandwich for us since we’re trying to eat vegetarian, gluten-free and Paleoish.

I’d like to try egg salad with caramelized onions again soon. And maybe some crispy bacon for the meat-eaters. Yummy!

I love avocados and I'm beginning to love egg salad! This is an awesome gluten-free, paleo(ish) recipe for Avocado Egg Salad, with a dash of curry spice.

Prep Time 5 minutes
Total Time 5 minutes

Ingredients

  • 4 hard-boiled eggs, chopped (I send mine through the egg slicer in both directions)
  • 1 large avocado, cubed
  • 2 tablespoons mayonnaise, homemade if possible
  • 2 teaspoons curry powder
  • Salt and pepper, to taste

Instructions

  1. Mix all ingredients.
  2. Serve either in a bowl or as a sandwich filling with lettuce and tomatoes.
  3. Enjoy!
