ZipList September Veggie Meal Plan

Happy September! This cooking day we’re doing another meal plan for vegetarian and blended-eater families of 4. Add each recipe to your ZipList Recipe Box and Shopping List. To double up and have each meal twice for a 2-week menu plan, add each meal to the Shopping List twice. Otherwise, you’ll fill your fridge with one week  of meals for a family of 4!

All meal plans will include at least 5 meals as well as bonus snacks and beverages. The intent of the menu is to provide at least one meal each day of your work week or to allow you to double it and provide 2 weeks of meals.

ZipList Vegetarian Meal Plan August 2012 Week 2

Welcome to this week’s vegetarian weekly meal plan. Freeze or refrigerate these meals after your cooking day to serve throughout the week.

Today is Bug’s first day of school. Her little lunchbox is packed and she’s off to preschool. She told me she wouldn’t miss me while at school, she would be happy. And, proud to say, I didn’t cry. She also told me it would be OK, because she would come back after school. Adorable, right?

This week’s plan is gearing up for Fall. Because I’m ready. Even if the weather is not! I’m trying something new this week. Planning out my weekly meal plan to be half refrigerated and half frozen for later in the week. You can save each individual recipe to your box, via ZipList and add those to your grocery list. Or, you can wait until next week when I’ve posted all my results and versions of the recipes!

Menu Plan Monday January 30


I’m so hooked on making new Homemade Condiments and whole food Breads as we continue Get Real, it’s a good thing I have plenty of meals to pull from the freezer. I keep forgetting to make dinners and lunches in addition to the bread and condiments!And this weekend is the BIG GAME. So I’m sharing what vegan and vegetarian treats we’re planning to munch on during the event (so we can pay more attention during the commercials). (My 7 Layer Dip includes homemade refried black beans, homemade salsa, guacamole, sour cream, cheese, black olive slices and green onions…I’ll try to post the proportions if we don’t eat it too quickly to take a photo.)

This week I’m using only recipes I have the ingredients for in my pantry or refrigerator. The amount of food we have is getting a little insane between the garden and the CSA box. I actually loved everything last week. My husband never got a chance to try Bacon-Pecan Peaches {Vegan} (the kids and I ate it all) and thought Curry Peach Quinoa {Vegan} was good, but “a little weird” to mix fruit and curry quinoa.

Last week’s failure was definitely the Chard and Chickpea Penne {Vegan}. I think it may just be as simple as switching the onion to red onion (which I’d intended to do anyway, but was mysteriously out of red onion). Nevertheless, it wasn’t as delicious as I expected.

As much as it pains me to say (I actually loved the dish) Bacon Blueberry-Balsamic Penne {Vegan} was last week’s failure. The kids eat it, but pretty slowly. And my husband (who is, granted, an eggplant-hater) won’t touch it. Sad, but true.
