It’s Day 2 of Vegan Month of Food and I’m sharing another vegan lunch box-friendly recipe: Simple Fruit Salad. The kids love this one and you can really make it your own by mixing in your favorite fruits, or whatever’s in season at the time. Be sure to leave out the walnuts if your school doesn’t allow nuts due to allergy concerns.

Delicious! And a big hit with the kids. If you’re not vegan you can use honey istead of maple syrup.
