Today’s This Week’s Cravings theme is EGG RECIPES (including eggless “eggs”); May is National Egg Month and I’m sharing my newest obsession: Quinoa Egg Noodles. Quinoa noodles are basically the entire reason I wanted a pasta maker at home. And, thanks to the lovely and talented Stand Mixer Attachment Fairies at KitchenAid, I finally got one! But, more on that later. Quinoa noodles are so awesome, because, like most kids, mine are addicted to noodles. They would eat them for every meal of the day if I let them. And, since I’m a vegetarian (though the kids are still undecided), we usually end up having “beef” or chickpeas on top of our noodles. But really, the kids like theirs best with just butter and Parmesan cheese. Putting any sauce on the noodles diminishes their noodliciousness, in their humble opinions. So the absolutely AWESOME thing about quinoa noodles is that the noodles themselves are a complete protein! How cool is that?

Quinoa Egg Noodles

Yield: 2 servings

Quinoa Egg Noodles

Ingredients

1 egg
1/2 teaspoon sea salt
1/2 – 1 cup quinoa flour (ground from 1/2 cup quinoa)

Instructions

Gently beat the egg and salt together. Add 1/4 cup flour. Mix well, then add more flour, 1 tablespoon at a time until dough is well formed.

Roll into walnut shell-sized dough balls and place in pasta press. I pressed mine into rigatoni. Use slicer about every 2 inches.

Boil 1 quart of water. Add 1-2 tablespoons of salt to water.

Add pasta to boiling water.

Boil 5 to 8 minutes. Drain.

Stir in butter and Parmesan cheese. Top with oregano or basil and serve.

The Results

Wowza! This was incredibly simple and delicious. My husband and I LOVED this pasta. The kids liked it at first, but got a little sick of the grainy texture, I think. Next time, I think I’ll try half quinoa and half whole wheat white flour.
