Wow, so, a vegan zucchini pepperoni recipe? Who knew it could be so simple to have that yummy pepperoni flavor without the meat!
The recipe is so simple and, in the end, you get vegan pepperoni. How cool is that?
You can use either green or yellow zucchini, but yellow looks prettier. 🙂 It’s just a matter of marinating the zucchini and roasting it. Easy peasy.
Vegan Zucchini Pepperoni Recipe
Ingredients
1 medium zucchini, preferably yellow, sliced very thin (about 36 slices)
1/2 cup soy sauce
1/2 cup olive oil
1/4 cup water
1.5 teaspoon liquid smoke
1 teaspoon House seasoning
1 teaspoon cayenne pepper
Method
Slice zucchini.
Combine all other ingredients in a zipper bag.
Marinate zucchini slices 3 hours or overnight in refrigerator.
Bake at 400 for 20 minutes, flipping slices halfway through.
Use as a pizza or sandwich topping or eat as-is.
