Day 63.
I linked this recipe in last week’s Saturday Stumbles when it caught my eye. I love pizza and ever since I had that vegan Pepporanata Pizza I’ve been craving another similar recipe. This one fits the bill. I also swiped the fire-roasted veggies method from that recipe to use in this Chicken, Bacon, Veggie Pizza recipe.
Chicken, Bacon & Veggie Pizza
Adapted from Chicken, Bacon & Veggie Pizza.
Ingredients
pizza crust (use your own favorite pizza dough recipe, I use Betty Crocker’s)
3 Tbsp. olive oil
1 tsp. garlic, minced
1 1/2 C mozzarella cheese, shredded
1 1/2 C cheddar or Colby jack cheese, shredded
1/2 bell pepper, cored, seeded & cut into strips (I used yellow)
1/2 medium red onion, diced
2 C “chicken” substitute of choice (baked tofu would be great, too), diced
6 “slices” tofu bacon, cooked & crumbled
Directions
Preheat the oven to 400 degrees. Prepare the pizza crust and let rise. Meanwhile, chop veggies. Put veggies (including garlic) on a cookie sheet and drizzle with olive oil and a dash or so of House seasoning (4 p kosher salt, 1 p each black pepper and garlic powder.) Bake in oven about 25-30 minutes, until veggies are carmelized (the original doesn’t call for this step, but I think it makes the veggies extra yummy to fire-roast them).
Roll out dough to about 15 inches. When veggies are done, remove from sheet and set aside. Place dough on cookie sheet. Drizzle two tablespoons olive oil onto the pizza crust, followed by half of each of the cheeses. Scatter half of the bell pepper, sliced onion, garlic, chicken, and bacon.
Add the remaining chicken, bacon, veggies and the rest of the cheeses. Finish it off by drizzling the last tablespoon of olive oil all over the top. Bake the pizza at 400 degrees for 20-25 minutes, or until the crust is lightly browned. Remove from the oven, let cool and slice.
The Results
So, so delicious. I love bell peppers on pizza. I haven’t always. But the caramelized peppers are sooo much more tasty. I highly recommend the method. You can change this up by roasting various veggies, whatever your prefer. That’s what’s so great about pizza, everyone can get what they want.
