Roasted Cauliflower is one of my favorite side dishes and roasted cauliflower soup, with a smidge of curry? Wow! I <3 it! So when my awesome mom got me a blender for my birthday, it was the first recipe I tried. Enjoy this recipe for Paleo Vegan Curry Roasted Cauliflower Soup:
Paleo Vegan Curry Roasted Cauliflower Soup
Preheat oven to 425F.
Toss the first five ingredients (all but the broth) in a roasting or baking pan. Roast for 25 minutes at 425 degrees Fahrenheit.
Add vegetable broth and three cups of your roasted vegetables to the blender. (Use speed 6 if you have the same blender.) Blend until smooth. Pour 1 cup of soup into each serving bowl and top with about 1/2 cup remaining roasted vegetables.
This dish is a definite repeat. We all LOVED it and it was so simple to make. I highly recommend getting a high powered blender if you can!
