Today’s This Week’s Cravings theme is CHICKEN and I’m sharing my recipe for Vegan Chicken Nuggets: Chickpea Nuggets. I don’t think I can overstate these chickpea nuggets. They. Are. Awesome.
Both kids went crazy for them…devouring several each as soon as they were out of the oven. And Little Goose loved them so much that she kept eating until we ran out of nuggets. We started with 2 dozen!
And it’s an incredibly simple recipe that you can mix just about any pureed veggies into for bonus nutrition. You can start with either hummus or just mashed cooked chickpeas, add whatever veggie purees you like (or go with just pure chickpeas) and mix in enough bread crumbs to form the chickpeas into nugget-sized balls (about 2 Tablespoons per nugget).

Instructions
Preheat oven to 350.
Mix ingredients and form into 2 Tablespoon balls (will make 18-24). Place on a greased cookie sheet and bake 15-20 minutes, flipping once, until golden.
Serve with dip if desired.
Freezing Instructions:
Divide among quart freezer bags and freeze. To serve: Thaw. Heat in microwave for 1 minute.

The Results
Yum! The kids and I loved these and Mr. Meaty even liked them. This is a HUGE win for our family and I’m really looking forward to trying it in all kinds of serving styles. I’ve already had chickpea nugget burrito wraps and they were delicious!

Hey Christine, they are sooo good. We went with honey mustard. But since you're vegan, maybe barbecue sauce or I'm not sure how maple syrup and mustard would be. Seems like a good possibility!
We had these for supper tonight. We are a blended family as well and we all loved them. We used honey mustard dipping sauce and also ranch dressing. (we splurged) They fell apart a bit. It was probably because I had to get creative with my hummus recipe since I had run out of tahini and didn't notice until it was too late. I will make it again. It was easy and my family enjoyed it.

I have tried this recipe twice and I can’t get it to cook right. It doesn’t seem to brown and it falls apart. What kind of bread crumbs do you use? I was using panko breadcrumbs.
I use homemade breadcrumbs, which are quite a bit larger grain than panko. To use panko, you’d probably wont’ to use as little as 1/4 cup of breadcrumbs.
