Black Bean Tortilla Soup
  • 1 can black beans
  • 1 can fire roasted tomatoes with green chiles
  • 2 cans vegetable broth
  • 1-2 tablespoons taco seasoning mix
  • 2/3 cup dry rice
  • optional toppings: avocado, tortilla chips, lime wedges, cheese, pico de gallo or hot sauce
  1. Place primary ingredients in VitaClay cooker.
  2. Cook on soup setting for 1 hour or in a slow cooker on LOW setting for 2 hours.
  3. Serve with desired toppings.
