Ancient Grain Einkorn Waffles

Ingredients
  • 2 large eggs
  • 2 cups Einkorn wheat flour (I buy mine HERE or you can get Jovial)*
  • 1 3/4 cup milk (I use raw)
  • 1/2 cup melted butter
  • 1 tablespoon sucanat or honey granules
  • 4 teaspoons baking powder
  • 1/4 teaspoon kosher salt
  • Fresh berries, maple syrup and more melted butter to top if desired
  • *opt for Pamela’s Artisan Flour for a gluten-free version
Method
  1. Heat waffle iron. Beat eggs until fluffy. Add remaining ingredients and mix until smooth. REMINDER! Your einkorn will look more wet than you’re used to. It’s OK, I promise. Pour about 1/2 cup of batter onto the hot iron (or whatever your iron takes) and close the lid. Bake about 5 minutes or until it stops steaming. Repeat with remaining batter. Top with berries, pure maple syrup and more melted, delicious butter, if desired.
