Curry Green Beans {Vegan, Whole Food}

Ingredients
  • 1/2 cup chopped onion
  • 1 teaspoon curry powder
  • 2 Tablespoons olive oil
  • 1/2 pound fresh green beans, trimmed and blanched for about 1 minute
  • 1 tomato, chopped
  • 1 teaspoon salt
  • 1/4 teaspoon ground coriander
Method
  1. Saute onion with curry powder in oil. Add remaining ingredients; stir and cook for several minutes. Reduce heat and simmer for 10 minutes.
