I need more healthy zucchini recipes… I’ve been thinking this in my head for the past few weeks. If you like to garden, even it’s just a small veggie patch in the yard, you have probably already discovered the amazing producing abilities of zucchini. It can be pretty overwhelming to try and figure out new and creative […]
We love soup, but our food intolerances and dislikes have made most soups difficult to share. This old fashioned paleo chicken noodle soup recipe is delicious. I didn’t used to like the actual chicken part of the soup, but it’s grown on me. If you’re gluten-free, you can use rice noodles. Skip the noodles […]
I’ve been experimenting with flexitarianism in an attempt to try out a Paleo diet, and eventually an Autoimmune Protocol (AIP) Paleo diet. So far, I’ve had success with chicken, and really crispy bacon. This recipe incorporates a new favorite of mine, zucchini noodles, and crispy bacon. This recipe is adapted from an eMeals.com recipe. It is fantastic. […]
I did a little experiment today with Mom’s Gooey Chocolate Zucchini Brownies recipe. It wasn’t entirely successful, but it was a good start overall. I went with the cake version, which adds two eggs to the brownie version, and tried it out on the CAKE cycle of my bread machine. What I love about baking […]
I’ve been playing with my beautiful dehydrator a bit more lately and I discovered a great, simple recipe for dehydrated zucchini chips! Yum! The kids love them, which is great, because the only way they usually love zucchini is in zucchini breads and brownies. Every now and then I can get them to eat it mixed with shredded cheese. But these babies are pretty much sliced zucchini plus a bit of Bragg’s Amino Acids (or soy sauce). Fantastic.
Chocolate Black Bean Zucchini Cupcakes Recipe Today’s This Week’s Cravings theme is CUPCAKES and I’m sharing my Chocolate Black Bean Zucchini Cupcakes, which I made with my beautiful WonderMill grain mill. I made another batch today using some shredded zucchini from the freezer! Fun. I’m so super excited about my black bean zucchinitastic cupcakes and my […]
I’m so excited about the bonus protein my mostly vegetarian family will get from bean flours. Please go check out my Chocolate Black Bean Zucchini Cupcakes over at WonderMill.
I’m back at it, Whole Fodifying one of my childhood favorites, Zucchini Brownies. How can it not be good to have kids scarf down zucchini-filled gooey chocolatey morsels?
**Congratulations to the USA Pan Winners!** When we lived in Colorado (age 3 to 5 for me), we had an amazing garden and an equally amazing next-door neighbor named Darla. She had several delicious zucchini recipes with my mom that we still make today. When I first decided to make my own zucchini bread, I […]
I was so excited about this recipe because it gave me a chance to hit the farmer’s market up in Kansas City while I was there. If you’ve never been to the City Market and you live in that area, you should definitely check it out. It’s full of excellent produce and strolling around the […]
