Another Paleo (ish) recipe today. This one uses green beans, which are sometimes considered a Paleo no-no, sometimes not. But, if you eat green beans, this is an amazing grain-free vegan Thanksgiving side dish. We're going to need all the help we can get this Thanksgiving to make a few things we can all eat. So getting this long-time favorite converted into a grain-free dairy-free dish is a big step.
As you may recall if you're a regular reader, I fell in love with all-natural Tyrrells Chips last year. They're delicious and a much better-for-you option when you have a potato chip craving. My absolute favorite: the Veggie Chips. Yum! Delicious and colorfully beautiful. I'll be sharing my amazing Thanksgiving side dish today as well. Spoiler alert: it's Gluten-Free Vegan Paleoish Green Bean Casserole!
OK, so I've been looking into Paleo vegetarian recipes. Because, well, our food intolerance list has become ridiculous. For me, it's gluten and sugar. For Goose (3) it's dairy and nightshades. The only issue is in whether I want to stay a "real" vegetarian. Paleo vegetarian or vegan meals are a bit more limited than traditional Paleo.
So, I've considered adding things like gelatin and fermented cod liver oil to my diet for protein/health reasons. After all, I'm a vegetarian for taste reasons, not really for moral reasons.
Our first pseudo-paleo dish was a huge hit. We made both a curry chicken version and a curry chickpea version. Both were amazing according to all reports. I loved the curry chickpea dish and it was super simple to make. We served ours over rice, but if you're a real Paleo person you can serve it as-is with just chicken, about a pound cut into cubes, or chickpeas if you're doing paleoish vegetarian.
To make it in line with the Whole30 vegetarian version of Paleo, sprout or soak your chickpeas ahead of time. We adapted this recipe from the Paleo Meal Plan.
I was lucky enough to get an amazing sample of Healthy Snacks recently. How do the products fare?
We loved all three flavors: Fruit & Nut Delight, Blueberry Pecan and Vanilla Almond Cashew. Yum! The girls' favorite was the Fruit & Nut Delight. Definitely worth buying again (as evidenced by my instant Amazon order).

This Healthy Snacks company teamed up with clean water organization, Waves for Water to gut and rebuild a NJ-based volunteer firefighter's home, which had been completely destroyed by Hurricane Sandy. Through its 'Do the KIND Thing Mission", the company was able to donate their time and $10,000 to the restoration.
While $10,000 will help, the community can get involved by sharing this video (highlighting the work of Waves for Water) to help shed light on the destitution that so many people are still living in due to Sandy. The best part? Every view = $1 more towards this firefighter's home.
