Indian-spiced Basmati rice breakfast cereal filled with creamy coconut milk and subtle Indian spices. The kids and I love it, and maybe I’ve found a rice pudding recipe Mr. Meaty will love!
Quinoa and Brown Rice blend is a stupid simple recipe that for some reason I just hadn’t thought to make until recently. The kids went crazy for it! We’ve had a bit of a problem previously because, while Bug loves rice and Goose loves quinoa, neither will eat a ton of the other on its own. And this blend, they BOTH ate with gusto. Win!
I swapped in some chickpeas and rustled up this meal on a busy weeknight. It’s filled with cheese, homemade cream of mushroom soup, broccoli and hearty brown rice.
Day 361. Gasp! 361? Only 4 days to go in this year; unbelievable. As you may have seen over at OAMM, I’m planning to follow along with Kelly’s Get Real series in 2012 to help our family make the transition to even more whole foods in our diet, so stay tuned for that in 2012. […]
Day 309. When I was in college, I went to my first vegetarian restaurant. (I was a vegetarian long before that, but grew up in a town where the veggie section at Asian restaurants was about as close as I could get.) That vegetarian restaurant/juice bar was called The Main Squeeze, and the very first […]
Day 296. Our kids are weird. They beg for vegetables and beans. Some of their favorite meals include black beans, tomatoes, corn and rice in various combinations. They’ve also been known try cry when all the broccoli is gone. I’m not complaining. It’s awesome; just funny. Needless to say, when I saw this cold Southwestern […]
Day 224. We love green bean casserole around here. But, in the summertime it’s just a bit too creamy. So this cheesy green bean skillet sounds like a great stand-in. And, bonus, I can make it in my rice cooker. No hot oven and so simple. Cheesy Green Bean Skillet Adapted from Cheesy Green Bean […]
Day 156. I have this magnetic wipey board in my pantry on which I’ve made a makeshift pantry-planner and menu planner. I even tack up the invoice from my CSA box to remind myself what fresh produce I have in the fridge. Yet somehow I STILL thought I had snap beans this week. Alas, what […]
I’ll be making a good luck black-eyed peas and collard greens dish for New Year’s Day and I want you to be prepared with the ingredients in case you want to make it that day as well. Here it is: Crockpot Vegetarian Hoppin’ John Ingredients 1 pound dry black eyed peas, soaked overnight 4 C chicken-style […]
OK, I’m still experimenting as I’ve never had the type of meatless sausage (soy-free) I’m trying here, but I needed a bit of comforting after the cranberry meatballs. So, old standby Black Beans and Rice. Tasty all on its own, now with spicy chorizo-style sausage. Yum! This is just destined to be delicious. This would […]
