As you’ve probably noticed, we love Mexican food. This isn’t what I’d refer to as traditional Mexican, but more of a creamy Tex-Mex or Southwest flavor. You don’t see too many traditional recipes using cream cheese, after all. But it does sound delicious. And easy! I think this will be a hit with the kids, too.
Creamy Southwest Chicken
Adapted from Easiest Dinner Ever.
- 4 cups (1 bag) Quorn chicken tenders (or any chicken substitute, cubed)
- 8 ounces cream cheese
- 2 cups black beans, cooked (see Soaking Dry Beans)
- 15 ounces diced tomatoes
- 4 ounces green chiles
- 15 ounces corn
- rice, tortillas or pita breads, for serving
Place all ingredients in a 4-quart slow cooker. Heat on low for 3-4 hours, stirring once about an hour into the cooking time.
So incredibly simple and creamily delicious. To add more flavor, you could spike it up with some taco seasoning, but it’s delicious as-is. The kids thought this was “awesome.”
