Salmon Salad may be my new favorite meat. Yes, bacon has been dethroned. Maybe. It’s definitely my favorite meal meat. Like, I can eat me some bacon, but I have to add things to really make it a meal. And, that’s true for salmon, too. But with this incredibly easy salmon salad, I can just mix it up and eat it with a spoon. Win.
It’s so freaking delicious I cannot even stand it. And, the best part? EVERYONE in our family loves it. If you’re a long-time reader, you may know I was a vegetarian for about 25 years. And one of my kids is sorta a pescatarian who allows for the exception of the occasional hot dogs, which she for some reason finds delicious.
The other kid, she loves her some meat. Small Fry and I bond over bacon, no joke. Now we ALL bond over salmon salad. We’ve eaten it so often that we pick up a couple slabs o’ smoked salmon at our local butcher (Heywood’s in case you’re in the Atlanta area) every week now. We have to have our salmon salad for quick lunches at home AND in their LUNCH BOXES! Yes, it’s the perfect lunch box protein. REJOICE!
Anyway, we scoop it, we eat it as a dip with veggies, we have cute little cucumber round sandwiches (move over cucumber tea sandwiches, amirite?) with salmon salad inside. We even have little salmon salad lettuce wraps. It’s delicious every single time.
It’s become our go-to lunch in the rotation. This and egg salad. Those are what we make when we’re hungry and need something quick, filling and fantastic. I cannot wait for you to try this, it’s so stupid simple I can’t event stand it. Try it. Try it now. You’ll thank me.
Easy Salmon Salad
Smoked salmon, we use a 2″ x 2″ piece, so maybe 4 ounces
2 tablespoons mayonnaise
1 teaspoon mustard
2 teaspoons relish
1 tablespoon crushed walnuts (about 4 halves)
Himalayan pink salt to taste
paprika to taste
Shred the smoked salmon with a fork.
Add remaining ingredients.
We like ours in lettuce wraps, as a dip or in the middle of cucumber slice sandwiches!
