So, we used to be 1 Vegetarian Mom + 1 Meat-eating Dad & 2 Undecided Kids. And we thought THAT was exciting.
Now, we're 1 Gluten-Free Vegetarian Mom (with thyroid issues), 1 Meat-Eating Dad, 1 Decided Kid---she went for Pescatarianism with a Hot Dogs Exception (I'm sadly not joking)---and 1 Intolerant Kid---she's a Meat-Lover with Lactose & Nightshade Intolerance. So we have an extraordinarily challenging family table.
Right now, we're primarily avoiding bread and gluten for me (the kids and Mr. Meaty are eating less, but still eating it). We're avoiding most dairy for Goose (the Intolerant Kid) and adding lactase drops to her cow's milk. We tried lactase pills for other dairy, but that failed miserably for her for whatever reason. Her nightshade sensitivity isn't as bad when she's off the lactose, but it's still something we have to be mindful of.
I've considered Paleo, even the Autoimmune Protocol version of Paleo, even though it seems a little scary for me since it's pretty meat-heavy. But I've been talking about Paleo with friends who have tried it and I think I might be able to survive it with eggs, fermented dairy and legumes instead of meat. Goose, Intolerant Kid, will love the meat. Bug, Pescatarian Kid, will not. So we may be able to prepare our meals together with two protein options. I'm hopeful.
Meanwhile, we'll continue with gluten-free flour sources until we get the hang of what's going on with all of our diets and various health issues.
Here's our meal plan for the week (or at least what we're going to shoot for this week)...
Gluten-Free Vegetarian + Family Meal Plan
Cauliflower Mash with Lentil Shepherd's Pie (might do mini pies and do one lentil and one ground beef version for the meaties)
Skillet Chickpea Curry (a Chicken version for the meat-lovers) with Steamed Broccoli
Zucchini Noodle Salad (shrimp on top for the meaties, fried eggs for me)
Garlic Mashed Cauliflower with Chickpea Carnitas (chicken version for the meaties)
Spicy Baby Bok Choy (with sesame beef for the meaties)
Southwestern Crustless Quiche and Spinach Salad with Honey Poppy Salad Dressing
