This week I’m using only recipes I have the ingredients for in my pantry or refrigerator. The amount of food we have is getting a little insane between the garden and the CSA box. So, I’m challenging myself not to buy anything this week for our dinners.Don’t forget to check out Meatless (Vegan) Mondays

    Thanks Veggie Val, much appreciated. I think it's one of those things you never know how you'll handle until you try. I never thought I could go vegan for weeks either, but it wasn't hard at all once I set my mind to it.
