Today’s Meatless Vegan Monday meal is Curried Chickpeas, Cauliflower and Kale.

    Kristi, your curry sounds fantastic! I've not done many vegan recipes, but I do lots of meatless ones. I think I may have actually done a vegan one here though because the puff pastry I use is made with vegetable shortening instead of butter! As I'm not a strict vegan (or vegetarian for that matter) I'm not a hundred percent sure, but fingers crossed! Thanks for this great new recipe carnival – I'm always looking for new meat free recipes :)

    This sounds delicious… Really like your idea for Mondays… I am looking for meatless recipes… I'm not sure if VEGAN is they we will go, Hubby is a full blown carnivore, but I'd like to gradually get the family to consume little and hopefully no meat.. lol..
