Cuban Black Bean Soup

Ingredients
  • 16 ounces dry black beans, soaked for 24 hours
  • 6 cups organic vegetable broth
  • 1 can organic tomato paste
  • 1 can green chiles
  • 1 onion, finely chopped
  • 3 cloves garlic, minced
  • 2 tablespoons cumin
  • 1 tablespoon red wine vinegar
Method
  1. Place all ingredients in slow cooker.
  2. Cook on LOW for 8 hours.
  3. Carefully blend to desired consistency either with a stick blender or in a high-speed blender.
  4. Serve.
