egan “Meat and Potatoes” is a portabello mushroom “steak” with sides of protein-packed quinoa and oniony spinach. I’m a huge fan of this method of cooking portabello mushrooms.
Putting any sauce on the noodles diminishes their noodliciousness, in the kids’ humble opinions. So the absolutely AWESOME thing about quinoa noodles is that the noodles themselves are a complete protein! How cool is that?
We were able to use fresh cucumber and tomatoes from our CSA box and a batch of already-made Soaked Quinoa, so this meal was extra frugal, delicious and simple. For vegetarians there’s no need to add a protein, because the quinoa has all you need!
