I adapted Miz Helen’s original recipe to veganize it by swapping out cream for coconut milk and swapping out sausage for quinoa. I also mixed up a “Parmesan” topping with popcorn breadcrumbs and vegan cheese powder.

It’s creamy and delicious quinoa and the pumpkin pie flavor is fantastic. Plus it’s like eating a big ole steak of vegan protein but it tastes like dessert.
Quinoa and Brown Rice blend is a stupid simple recipe that for some reason I just hadn’t thought to make until recently. The kids went crazy for it! We’ve had a bit of a problem previously because, while Bug loves rice and Goose loves quinoa, neither will eat a ton of the other on its own. And this blend, they BOTH ate with gusto. Win!
This recipe is awesome. The major change I made is the “bacon,” for which I swapped in my new favorite, Bacony Quinoa.
The greatest part of this substitute is it’s a natural complete protein (quinoa) with a bit of bacony flavor added in. It’s awesome! AND, you can make it “crispy” by pan-frying the cooked quinoa. Awesome! I highly recommend giving this recipe a shot.
