This Week’s Cravings I’m sharing Creamy Vegan Potato Soup perfect for a lunch box thermos on chilly days. And it’s so simple to make you’ll kick yourself for not making creamy potato soup more often.

Instructions
Mix all ingredients together and bring to a boil. Let simmer for about 10 minutes and blend with a stick blender. Pour into thermos hot.
Freeze extra soup in muffin tin servings and thaw two muffin “pucks” for future thermos meals.
