Welcome to this week’s vegetarian weekly meal plan. Freeze or refrigerate these meals after your cooking day to serve throughout the week. We’re into the school year now and planning based on what Bug can take in her preschool lunch box. You may notice I’m on a bit of an Italian kick. Italian food just calls to me during the transition to the Autumn months.
