Real Jalisco, near my mom’s house (7 Highway) in Blue Springs, Mo., is the restaurant that crafts my favorite enchiladas ever: Enchiladas Nopalitos. I’ve tried to emulate them at home. And they’re good. But since I’ve been unable to find fresh Nopalitos (I use jarred), they’re not quite as good. Plus Real Jalisco’s sauce is freaking fantastic. If you live anywhere near Blue Springs, Mo., and love Mexican food, go there now. Have a late lunch or early dinner. Delicious!
