It’s a super important week for freezer cooking in our house because our big girl, Bug, is a single week away from her first day of preschool. And, while it may be super dorky, I’m incredibly stoked about packing her tiny lunches three days a week! She has requested peanut butter sandwiches, grapes and carrot sticks (plus chocolate milk) for her first day of school lunch. So I’m planning a cute little bento box.
But, while I’m super excited now I’m sure the day will come that I’m stressed about getting that lunch in the box as we’re rushing out the door. So, this week I’m planning six meals: three easy-pack lunches for Bug and three vegetarian dinners for the family. A great resource for the back-to-school lunches is the new Back-to-School Mini Menu, from which I’ve picked a couple of Bug’s lunches.

- Grilled Vegetarian Cheeseburger Wraps (live at 10 a.m. EST Monday)
- Vegetarian Unstuffed Shells (made with ground beef substitute)
- Tom Yum Fried Rice, veganized
