You know how I love burgers? Well these sound especially delicious and simple! I made mine out of walnuts, but you’re welcome to use whatever blend/combination of nuts you enjoy!
Ingredients
1 onion, shredded1 garlic clove, crushed1/2 cup vegetable stock2 cups chopped nuts (I used walnuts)1 cup fresh breadcrumbs2 medium carrots, grated1/2 Tablespoon Italian seasoning1/4 cup pumpkin pureeInstructions
Mix ingredients. Preheat oven to 350.
Roll “dough” into about 12 balls and place on a sprayed or greased cookie sheet.
Bake at 350 for 20 minutes.
Freezing Instructions:
Divide among quart freezer bags and freeze. To serve: Thaw. Heat in microwave for 1-2 minutes or in oven at 350 for 5-10 minutes.
